I love this so much, I make it once a week! I always use yams, sweet potatoes, red and golden beets, and just 1/4 of a red onion. I've even added baby carrots when I was short of veggies; I put them in with the beets. The first time I made it as written and it was way too peppery for me, so now I just use 1/4 tsp. ground black pepper. Try it, it's awesome!
Love this recipe. My beets in the garden are ready now. I don't care that it is summer-you can do these on the grill if you want.. This is a winner and so simple too!

This tastes great! I don't think it even needs the sugar. (Or maybe just use half?) I chopped the onion pretty small and some of them blackened in the oven, which turned out to be a nice added crunch to the dish. Will make again!!
so simple yet so delish! I love this recipe and it does not need tweeking...but I tweek things just because I like to experiment. I put curry and a bit of coriander in this and omit the sugar since I am diabetic and sweet potatoes have they're own natural sweetness when roasted. Its wonderful as a side dish with just about any meat but also good when your roll it up in phyllo dough with a sharp cheddar cheese and bake it as a main dish with a green salad or a cooked dark green veg like kale or spinach and a glass of nice Cabernet.
This is my 2 year old daughters "faborite" !!! I make this at least a few times a month.
Wow. A great way to use these veggies. Followed recipe exactly and served with chicken breasts and rice. Delish!!

I have made this receipe almost weekly since the very first time I made it and I absolutley love it. Everyone who has tried it, which is quite a few have also loved it.
My second time making this. The WHOLE family LOVED this recipe. I didn't have sweet potato on hand when I found this recipe so I substituted with butternut squash and it turned out so YUMMY! I also added 3 fresh garlic and some parsley to give it some green color. This will be a recipe I will make throughout the year.
This was great! I took it to a party and got rave reviews even from people who don't like beets. Nice flavor. I spread it out over two baking sheets. I cut everything a little on the small side so probably should have cooked it a little less than I did. But it still came out great.
My mother made this and gave me a dish to take home. It never made it out of the car. My husband and I ate it with our hands. Hubby's not a fan of beets, but they added a great flavor and color to the dish. I absolutely loved it all.
We receive beets from our csa and I'm always looking for new ways to make them. This is a great side dish. Will make again

Just wonderful! I was looking for a beet recipe as I've never tried to cook with them and I'm glad I chose this! Added some parsnips to bulk it as I didn't have enough beets or sweet potato and it still came out great. Will certainly use this in heavy rotation. THANKS!
Very good and healthy for you too. I used fresh garlic instead of powder and I didn't see the need to use a plastic bag to mix all the ingredients- can be done easily in a bowl. I would increase the cooking time of the beets to 20 mins because they were a little bit harder than the yams at the end. Overall- it was a hit.

I absolutely love this recipe!! I had gotten some beets from our organic co-op and had tried them in a couple of different recipes. I was about to conclude that I hated beets and would never try to eat them again. Then I found this recipe, followed it exactly and the results were fabulous. Not only do I LOVE the beets cooked this way but I actually crave this recipe now. I'm definitely making this for Thanksgiving and surprising everyone with how much they'll like beets. It was with trepidation that I tried this recipe, trying to find a way to use up the fresh beets I'd purchased for xmas, only to be told by my family not to serve them. Since I just happened to have sweet potatoes and onions on hand I decided to make this recipe and was I pleasantly surprised. It was delicious!!!!
Absolutely delicious!! I was scared at first but it was so easy, so fast, and so delicious. I bet I could feed this to any picky eaters. Very sweet and savory!
This was awesome! I wanted to add some new veggies to our dinner menu and this let me mix it with something the kids already liked. I've made it with both onions and without, and didn't notice any major difference. I did take others' advice and use brown sugar. That made a big difference. To make it easier to handle, I cook it in a cassarole dish. You get a nice sauce which can be poured over it or your meat dish. This will be going on our Christmas dinner menu for sure!
I'd have given it 5 stars but it needed some extra seasoning. I added rosemary & sage. Otherwise, this is a great recipe!
Love, love, love this! I use a lot of fennel seed when I roast mine. Last night I tossed in some brussels sprouts, also. Its good with a little chicken Italian sausage on the side. I never add sugar, its so sweet already!
Made for Thanksgiving last year--they were pretty good! Used agave instead of sugar and fresh minced garlic instead of powdered.
This is a very good recipe but I can't give it 5 stars as written. I cut the salt and pepper by 1/2 and it was still too much salt and pepper for us. Also, the beets need to roast 15-20 min. longer than stated before adding the sweet potato (or chop beets smaller so they cook faster). My beets needed more roasting, even though I baked them 10 min. longer than the recipe calls for. Other than that, its delicious. I used brown sugar as per others' suggestion. Add your favourite spices or herbs to take it to the next level. A very colourful dish, too!
I LOVE this recipe! I have made it a few times and it is great every time. The best thing about it is you can throw in other vegetables and mix things up. I've added peruvian pototoes before, as well as butternut squash and apples! Always a yummy treat!
This is unbelievably good. As another user suggested, I used fresh garlic- sliced thinly. I know many users have suggested using brown sugar for that molasses taste... I just skipped the sugar all together and added a little real maple syrup. I'm really enthralled by this recipe. I also cut the recipe down to about 4 servings. I couldn't believe my 2yo LOVED it too. Just a little warning on those beets without being gross... the next day... when you... you know... just remember that you ate beets the day before or you'll think there's something wrong with you!
Kids needed extra sugar and didn't like the onions. We didn't use sweet potatoes.. Adults loved it.
I love beets and yams....delicious recipe. Crumbled some feta on it for a more main vegetarian dinner. It makes a lot but for a more main course, perfect for 4.
This is my go to recipe for beets, absolutely love it! I use red onion and I also sprinkle a generous amount of roasted pepper and garlic spice from club house
Not only is this so yummy and a wonderful combinaton of tastes and textures, I love saying "beets and sweets" - it makes me smile. I would have never thought of tputting these veggies together , but it is now one of our favorite side dishes.

Made this for dinner tonight and it was awesome. Just the right combination of savory and sweet. I roasted the beets for a full half-hour before adding the sweet potatoes and onions--double the suggested time--and I would go even a little longer next time. I like my beets very soft--as soft as the potatoes. All the ingredient proportions were perfect, though--not too greasy, too sweet, or too salty. Just right!!
I will start by saying that I've never liked beets. They taste like dirt to me. But they came in today's CSA box and I wasn't about to compost them. That being said, this was the least-bad they've ever tasted to me. The sweet potatoes and onions, however, were delicious. So, 5 stars (didn't think it was fair to dock points due to my prejudice against the beets, next time I'll use carrots or white potatoes...)
This recipe was amazing! I substituted real garlic and pared the whole thing down for 2 people. Even a couple of beet hating people LOVED this! MMMMmmmmmm.
I just wanted to let you know that this was excellent! I have been wanting to cook with beets, and this recipe has made me a true fan. Everything was so tasty. I did follow another person's advice, though and turned down the temperature to 350 for the last 20 minutes. Terrific!
This was very good! I did not use sugar as beets and potatoes are sweet enough.
This was a big hit. Turned out even better than I thought it would. I used three red and three orange beets, but followed the recipe as directed. I wouldn't change anythng. Very good.
Added some Kielbasa and called it dinner!
Very helpful recipe. It was my first time preparing raw beets. My other half does not like sweet potatoes so I used regular potatoes and followed the recipe. Everything tasted wonderful!
This was great! I was expecting it to be a bit bland since it is low on spices but wrong! It was such a great combination of flavors. I loved the color it brought to the thanksgiving table and the plate too. Very autumnal. Will definitely make again.

Beets aren't my favorite things in the world. Honestly I think of Dwight Schrute when I see them. But I was given a bag full and this recipe actually made them taste...not bad. I much preferred the sweet potatoes and onions in this recipe to the beets, but overall not bad.
Wow! I thought I hated beets before I tried this :) Instead of sweet potatoes, I used yams. I had so much fun making this dish, as I've never before cooked with beets. The only thing I didn't care for was the amount of onion in it.
Delicious! Made this as a change from my usual side dishes for Christmas dinner. It was a hit with my guests and I loved it. The only change I made was to use fresh minced garlic instead of the garlic powder. Baking the beets for 20 minutes before adding the other vegetables is best. Great flavour. A definite keeper.
I loved this and it presents beautifully! Also, it warms up very well (if you have any left). I used 4 cloves of minced garlic instead of the garlic powder. Also, I used the tip from another review and tossed the sweet potatoes, garlic, and oil in a bowl with a top in an effort to not waste a plastic bag. I brought some to a co-worker who claims to hate beets but he loved this dish. This recipe is a keeper!

I must admit I did a few variations. It was the first time I tried it and it turned out wonderful. I had beets of various colours but of the same size (smallish). I also had smallish yams. I washed, peeled and sliced beets and yams 1/3 inch. I brushed some extra virgin olive oil on both sides of the vegetables. I didn't add anything to the beets (the golden are already pretty sweet). I brushed the oil on the yams as well and I sprinkled tarragon and black pepper on them. I also cut two pears in 1/2, oiled both sides and sprinkled tarragon on skin side. I put everything in the oven at 375 F until ready (30 - 35 min). I cut the pears and mixed them with the beets and the yams. I sprinkled some white jalapeno and pear balsamic vinegar. It turned out very tasty. The recipe was nice and simple and easy to make changes to. I like that a lot in a recipe.

Bravo. I agree with a previous review that the beets could be more tender. I'll precook them longer next time. I used butternut squash instead of sweet potatoes because that is what I had on hand from our CSA (community supported agriculture). I would bet some pecan halves mixed in about 15 minutes before it is done would be a great addition, especially for a vegetarian main dish.

So good! I only had 3 beets and one sweet potato, so I added 1/2 of a chopped up butternut squash to the mix. Yummmm!!!! *This recipe is great as is, but I also drizzled some sweet chili sauce on some after it was coked and it was even better!
Great recipe! The beets weren't as soft as I'd like, even though I cooked them for 20 minutes instead of 15. Loved the flavor of the sweet potatoes - the combo of sweet and salty was just right.
My guests raved about this easy dish at Christmas. I've been trying for years to find the right replacement for candied sweet potatoes and finally found a keeper. It's also beautiful on the table. Will definitely repeat next year.
This was delicious! I wasn't sure what to serve it with and had some significant and varied dietary needs to consider so we made this into the main dish by tossing with brown rice, lentils, toasted walnuts, and a balsamic reduction- a GREAT combination. I think that next time I would make smaller (bite sized) chunks and roast for a shorter time, especially if I were to serve it the same way.

This is fantastic. Beets are a pain to work with, but its worth it for this recipe. I used brown sugar rather than regular, but otherwise made as written. Can't wait for the leftovers tomorrow!

Perfect veggie dish. Great fall side dish. I did also add carrots, cooking them with the beets. Otherwise I found recipe ingredients were a good blend.

Followed the recipe since this was my first time making it. I have to admit I don't have a lot of experience with beets. The flavor was earthy...not bad, just...very earthy. Next time I'll use coconut oil when roasting as I've read this is supposed to help with that and help bring out the natural sweetness of beets.
This has been s big hit each time I made it for "crowds" big and small. This is a great recipe for those that don't like sweet potatoes; the beet and onion medley tones down the sweetest of the sweet potatoes and turns it into a sweet and savory dish.
Too much onion flavour. The sweet potatoes tasted more like onions than sweet potatoes and if you like onions that would be fine, but my husband and I are not real onion likers. I tired this a second time without the onions, used a little chives instead and it was fabulous.
Good recipe for root vegetables. Too much pepper though.
I also added about 4 carrots sliced into thick pieces which I roasted the same time as the beets. Added more olive oil by eyeing it til all were well covered and added a couple dashes red pepper flakes. Going to try adding some apple chunks and maybe even pumpkin next time as well. Great fall dish.
Excellent veggie! My onions were pink though! not like the pretty picture. I did omit the sugar and substituted maple syrup. I would definitely make these again!
Delicious! I think the beets were a little too done, and so I wouldn't cook them for the extra 15 minutes at the beginning. That could have been because I chopped them too small, though.
Fantastic! Very easy to prepare and it's even easier to enjoy! The only thing I changed was that I used minced garlic instead of garlic powder. These roasted veggies also look great on dinner plate.

Yummy. I could not keep the beets from coloring everything red, but who cares when it is this tasty!
Mine was very spicy.. I was confused at what made them so spicy. It is good, but some of my vegetables were undercooked. If it is the pepper that makes it spicy, then I would recommend decreasing the pepper and using canned beets. Some of my beets had a hard coating, like I didn't peel the beet skin enough. That's why I would recommend canned beets, plus it's less mess.
My kids will eat it, but need some coaxing. We parents, really liked this one. I followed the recipe except that I never use plastic so I just tossed the sweet potatoes with onions and other ingredients in a bowl; no need for the bag. When it was time to add the rest to the baking sheet, I actually poured the hot beets into my pyrex bowl that had the oil, potatoes, etc, mixed it up and poured it back out onto the sheet. I found it really difficult to mix on a baking sheet - the pieces kept falling off (step 3) so I again, just poured it all into the bowl and back to the sheet - the mixing is important to redistribute the juices that form. Chunks of Vidalia onion work really well and we used white sweet potatoes. Chopping can be done the night before - which is so key for us - so you only have to plan for the 45 min of mixing/cooking before dinner.
Made as per recipe. Quite delicious but a little salty so I'll cut back on that next time.

I used 2 beets, 2 sweet potatoes and an onion, since that's all I had on hand. It turned out really good! I would perhaps add a bit more salt...I could barely taste the seasonings, but the veggies by themselves were delicious!
Delicious. I was out of olive oil so I used vegetable oil and brown sugar instead of white sugar. Easy, healthy and yummy - will def do it again.

Very good. I never thought I would like beets, but they are really great. I used brown sugar in place of the regular and really like that flavor it puts into the dish. I also just used one beet and one sweet potato. The cooking time can be cut if you make the sizes of the chunks smaller. I don't care for onion, so I did not use.

A really nice way to prepare beets and sweet potatoes. A dinner guest even commented that he really liked this even though he usually doesn't like sweet potatoes.
This is a delightful dish! The only things I changed was to increase the sugar to 1 Tbsp (used brown sugar) and used fresh minced garlic instead of the powder. Then instead of tossing the beets separate I just mix everything together in one big bowl, spread on baking sheet and bake for 45 minutes. Comes out perfect every time!
I am not usually a fan of beets, but I really enjoyed this recipe! It was super easy to make, and even the kids liked it.
Since beets are considered a super food, I needed a way to like them (cannot stand canned beets). Dr. Oz says to roast them, so tried this recipe. Recommend using half the pepper & a little more sugar -- 1 tbsp? (next time). For just my husband & I, I used 3 fresh beets and 1 large yam. Only had a brown onion on hand, and it all worked out great. The mild sweetness makes it likeable for kids too. Really a terrific recipe. Now, what to do with those beet greens. . .(ha)
