Apple Oatmeal Bar Cookies

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
  2. In a large bowl, cream together the butter and brown sugar until smooth. Beat in the oats, flour, cinnamon, and vanilla. Fold in the applesauce and walnuts. Transfer the mixture to the prepared pan.
  3. Bake 35 minutes in the preheated oven, until golden brown. Cool in pan, and cut into squares.

This is my new favorite bar recipe. I used whole wheat flour, raisins instead of walnuts and doubled the applesauce (unsweetened). So yummy!

We weren't impressed with the Apple Oatmeal cookie bars. Not enough flavor and the pan size is too small. Maybe with chopped apples it would be better!

I added an egg and increased the applesauce to 1 c simply to bind the ingredients together. Without this change, I would be baking a pan full of crumbles.

Unsatisfying. Blah. A mouthful to chew and dry. Sorry! Really think it needs egg.

This is a mild, semi-sweet cookie. I received compliments both at home and playgroup. Will add this to my favorites.
