Colette's Smoked Sausage Frittata


I came up with this savory frittata one morning when I had run out of bacon. You can combine different meats, cheeses, and vegetables for an endless variety. This recipe is great for using up leftovers!

  • 1 ½ cups smoked sausage, sliced

  • ¼ cup diced onion

  • 6 large eggs

  • ½ cup milk

  • ¼ cup sour cream

  • salt and ground black pepper to taste

  • 1 ½ cups shredded Cheddar cheese, divided


  1. Preheat an oven to 400 degrees F (200 degrees C).

  2. Cook sausage and onion in an oven-proof skillet over medium heat until sausage is browned and crumbly, about 10 minutes. Drain excess grease from the skillet.

  3. Whisk together eggs, milk, sour cream, salt, and pepper.

  4. Sprinkle 1 cup Cheddar cheese over the sausage in the skillet, then pour egg mixture over top.

  5. Bake in the preheated oven until a knife inserted into the center comes out clean, about 18 minutes.

  6. Sprinkle with remaining 1/2 cup Cheddar cheese and continue to bake until the cheese has melted.

  7. Cut into 6 wedges to serve.
