Bourekas are puff pastry pockets filled with cheese. They are great served as an appetizer or for breakfast with salad, olives, cheese, and plain yogurt, the traditional Israeli way. They could also be filled with leftover mashed potatoes or spinach and feta.

Ingredients

  • 2 large eggs, divided

  • 2 cups shredded mozzarella cheese

  • 1 teaspoon dried parsley

  • 1 pinch garlic powder

  • 1 pinch onion powder

  • 1 pinch salt

  • 1 pinch black pepper

  • 1 (17.5 ounce) package frozen puff pastry

  • 2 teaspoons water

  • 2 tablespoons sesame seeds

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.

  2. Beat 1 egg in a medium bowl and mix in cheese. Season with parsley, garlic powder, onion powder, salt, and pepper. Set aside.

  3. Cut each puff pastry sheet into 6 equal squares on a lightly floured surface for a total of 12 squares.

  4. Beat remaining egg with water in a small bowl. Brush edges of each pastry square lightly with egg wash. Place a heaping tablespoon cheese mixture in the center of each square. Fold pastry over filling and seal edges with a fork. Transfer to the prepared baking sheet, brush tops with remaining egg wash, and sprinkle with sesame seeds.

  5. Bake in the preheated oven until golden brown, about 30 minutes.
