Made the same as a Chocolate Eclair Cake. But I tried adding a layer of apple pie filling, got rid of the chocolate, and added some spices. My family loved it.

  • In a bowl, mix the pudding mix, milk, whipped topping, and a pinch of nutmeg.

  • Layer the bottom of a 9x13 inch pan with 1 package cinnamon graham crackers. Top with 1/2 the pudding mixture. Layer with another package graham crackers. Spread the apple pie filling over the crackers. Top with another package graham crackers. Layer with remaining pudding mixture, and top all with remaining package of graham crackers.

  • In the microwave, heat the vanilla frosting for about 10 seconds on High, until easily spread. Mix in cinnamon. Spread over the top layer of graham crackers in the pan. Cover, and refrigerate at least 12 hours.

I made some changes. I made the pudding as directed on box for pie filling added nutmeg and did not add whipped topping to it. Layered that with cinnamon graham crackers pudding apple pie filling as stated. for top I made cinnamon whipped cream with whipped topping and a pinch of cinnamon. Kids liked it and it wasn't as sweet as it would have been with frosting. Read More

Eh I'm on the fence about this one. While eating my piece some bites I thought it was good other bites I thought it wasn't so good. My favorite flavor was the cinnamon frosting (I made homemade frosting) but I also thought the frosting made it too sweet. The "cake" is still in the fridge and nobody's gone back for a second piece since we had it a few days ago. It was OK but I don't think we'll have it again. Read More
