Lentils with Tomatoes


This is a Middle Eastern dish of lentils and tomatoes with a deliciously simple taste. Serve it with rice, couscous, or whatever you like.

  • 1 quart water

  • 1 cup dry lentils

  • 3 tablespoons olive oil

  • 1 medium green bell pepper, chopped

  • 1 medium onion, chopped

  • 2 ½ cups peeled, seeded, and chopped tomatoes

  • salt and pepper to taste


  1. Bring water to a boil in a pot and stir in lentils. Reduce the heat and simmer 20 minutes; drain.

  2. Heat olive oil in a large skillet over medium heat. Add bell pepper and onion and cook, stirring, until tender. Mix in tomatoes and season with salt and pepper. Stir in lentils, reduce the heat, and simmer until lentils are tender, 25 to 30 minutes.
