Orange Juice Muffins with Honey Spread

  1. Preheat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 medium muffin cups.
  2. Mix baking mix, 2 tablespoons sugar, the egg, orange peel, and orange juice. Beat vigorously for 30 seconds.
  3. Fill muffin cups about 2/3 full. Mix 2 tablespoons sugar and cinnamon and sprinkle each muffin with about 1/2 teaspoon of sugar mixture. Bake 15 minutes. Serve with honey spread.
  4. To Make Honey Spread: Beat 1/2 cup margarine and 1/2 cup honey until fluffy.

These are very quick and easy to put together. They are best served warm. The honey spread really seals the deal. They do dry out rather quickly, so they're not as good the next day. I used foil...

I used a homemade baking mix and added a teaspoon of pure vanilla extract to the muffin batter. I also do not keep margerine on hand, I used butter in the spread instead. This was not a hit here...

I did not like these.

Good muffins. Easy to make. The spread was good too, but I'm not a huge fan of honey. I like them better without the honey spread.
