  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 to 4 mini loaf pans (5x3 inches each).

  • Zest and juice an orange; set 1 tablespoon zest aside. Pour orange juice into a one-cup measuring cup, add boiling water to fill to one cup measurement.

  • Pour juice mixture into a bowl and add the melted shortening, vanilla, egg, flour, salt, baking powder, baking soda, sugar, grated orange zest and chopped nuts. Stir well and pour batter into the prepared pans.

  • Bake at 350 degrees F (175 degrees C) for 45 minutes or until a toothpick comes out clean and bread is nicely browned.

Excellent! So easy to make. I did use splenda instead of white sugar and margerine instead of shortening. I made it in one regular-size loaf pan and it was done baking in 25 minutes. My first time making and eating orange bread. It was delicious! Read More

I made two batches using the mini loaf pans for gifts. The first batch did not rise very much and I determined that the 1 tsp of baking powder with the addition of the baking soda must be the culprit. I increased the baking powder to 3 tsp and eliminated the baking soda after looking at another recipe. This remedied the situation and the second batch was lovely. Read More
