Mediterranean Marinated Roasted Peppers

"Roasting brings out the full range of flavors in sweet bell peppers. A piquant soy sauce mixture and a sprinkling of feta cheese are the perfect toppers."

  1. Arrange peppers, skin side up, in single layer on rack of broiler pan. Broil 6 to 8 minutes, or until skin is blackened. Turn peppers over; cook 5 minutes longer. Remove from broiler; let stand on rack 5 minutes.
  2. Meanwhile, whisk together lite soy sauce, vinegar, oil, oregano and garlic in medium bowl. Remove skin from peppers. Add peppers to vinegar mixture, stirring to coat well. Marinate 10 minutes, stirring occasionally. To serve, arrange peppers on serving plate; sprinkle cheese over peppers.

Wow!!! These peppers made a party in my mouth. I also added red onions,I loved the flavor and it was so easy to prepare!!!

We really liked these. Fairly quick to prepare too. I did put some chopped basil over the top of the feta. Many Thanks.

We enjoyed was a little different from a run-of-the-mill roasted pepper. I will make them again.
