  • In a medium bowl, stir together the balsamic vinegar, olive oil, soy sauce, garlic and basil. Add cheese and tomatoes; tossing to coat. Cover and chill for 30 minutes to marinate.

This salad made for a nice dinner on a "too hot to cook" night. My changes were to skip the soy sauce (personal preference) and to heat up some Louis Rich chicken breast strips and serve them on top of the salad to make it more of a meal.
