This is a wonderful refreshing summer recipe. Very good! A must try.

Directions

  • In a mixing bowl, whisk together orange juice, lime juice, shallots, garlic, chili powder, cumin, and sugar. Pour 1/2 of this mixture into a large, resealable plastic bag, and add the chicken breasts. Seal, and refrigerate for at least 2 hours. Refrigerate the remaining dressing.

  • Preheat an outdoor grill for medium-high heat. In a large salad bowl, toss romaine lettuce with oranges, celery, and green onions. Set aside.

  • Lightly oil grate, and place chicken on grill. Discard the marinade from the chicken. Cook for 6 to 8 minutes each side, or until juices run clear when pierced with a fork. Remove chicken from grill, and slice into thin strips.

  • Toss salad with reserved dressing, and top with sliced chicken.

I thought the sauce failed as a dressing... I couldn't eat the salad. I think it had something to do with the mixture raw garlic orange and cumin. Basically it barely stuck to the leaves except the garlic stuck really well and it was just too strong. Otherwise the chicken was fine. Not really a strong orange flavor but it's good. Read More

This recipe was okay but I probably won't make it again. I read reviews from others and added avacado as suggested which was good. I would definitely suggest making at least twice the amount of dressing. there isn't enough to both marinate the chicken and dress the salad. Read More

If you like avocados you have to try them in this salad! The salad dressing is a perfect flavor match and pouring it over the sliced avocados before tossing the salad keeps them from turning brown. Read More
