A simple salsa that is sweet and just mildly spicy. This is made with watermelon, Anaheim pepper, onion and balsamic vinegar. Hotter chilies can be substituted for more spice.

Just loved this- and will make it many many more times! Great way to use up leftover watermelon. I found Anaheim peppers (spicy!) but think jalapeno peppers could do well too. I pulled some fresh cilantro (about 1/2 TBS) from my garden and threw in about 2 TBS of lime juice. It was devoured quite quickly! Read More

Like other reviewers stated the ingredients combination may throw you off but once you taste it it's incredible! I substituted the Anaheim pepper for two seeded jalapenos and I also added a pinch of dill weed. Read More
