  1. In a large skillet over medium heat, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 2 tablespoons of drippings.
  2. Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 minutes.
  3. Make six wells in the potato mixture; break one egg into each well. Cover and cook on low heat for 8-10 minutes or until the eggs are completely set. Sprinkle with cheese and bacon.

This is a great dish! I will be making this again soon!

This dish is very good. However, we preferred serving the bacon along side this dish and topping with loads of sliced green onions and it was sooooo good!

I liked this but be careful. In the 8-10 minutes it took to cook the eggs they had hardened yolks. yuck. I'll probably try again since the only thing left on everyone's plates was the ball of...

Ok, so I totally just used this recipe as a base for the one I actually made. We didn't have cubed hash browns, so I used regular ones, we didn't have bacon, so I used breakfast sausage. I also ...

Very good! We ate the bacon separately and I sprinkled the dish with shredded cheese. Definitely a make-againer!
