I'm not a fan of black-eyed peas, but this salad is good. I used a yellow pepper instead of green, and omitted the lettuce since I needed to make the salad in advance. The company enjoyed it.

I added cucumber and did not add lettuce. I also used a vinegarette instead of ranch and it was great. Oh, I added garlic powder and black pepper.
