  1. In a skillet, saute onion and green pepper in oil until tender. Stir in the sausage, tomatoes, water, sugar and seasonings. Bring to a boil; add the rice. Cover and cook for 5 minutes or until the rice is tender.

Super tasty and easy! I did not have any instant rice, so instead used regular long-grain white rice, plus 2 cups of water instead of only 1/2 cup.

This was okay for a quick, easy dinner. Compared to real jambalaya the flavor was lacking, but if you're in a hurry and just want something to use up some sausage and peppers, it's a decent pick...
