Cheddar Rice Casserole

So this took 2 taste tests before I decided it was a great dish. When I first served this fresh out of the oven, I didn't think it was necessarily spectacular. It was only after reheating left-overs the next day that I became aware of the yumminess of this dish. It was fairly quick and easy to make with items readily on hand (although I didn't have Worcestershire sauce so I sub'ed a mixture of soy sauce, Tabasco, lemon juice, and sugar to come up with something close to it--and it worked). Also, I added faux ground beef to the mixture (we are vegetarians) as well as extra cheese. Served with green beans, it was a good, ole all-American meal (with plenty of left-overs to boot).
