  • PREHEAT oven to 375 degrees F. Grease or paper-line 12 muffin cups.

  • COMBINE flour, cornmeal, sugar, baking powder and salt in large bowl. Beat eggs, pumpkin, milk and vegetable oil in medium bowl until combined. Add to flour mixture; mix thoroughly. Spoon batter into prepared muffin cups.

  • BAKE for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Serve warm.

Yum! The pumpkin is subtle, but adds a little something interesting to your average corn meal muffin. I have served these as a compliment to bean enchiladas and also to creamy corn chowder as well as for breakfast. They were eaten right up and guests think I'm some kinda cook! :-) Read More

So terrible! I was very excited by the nutritional information so I tried them. I followed the recipe exactly and they were very disappointing. The muffins are heavy, dry, bland and just awful. I threw them out for the birds and they didn't eat them for 5 days! Sorry but this recipe doesn't rate well....I would keep on looking. Read More
