"I am Diabetic, so I made up this dish. I have it alone or with meat or chicken. Onion, garlic, tomato, and broccoli are fried up with a bit of brown rice to make a tasty side dish that eats like a meal."

  1. Heat the olive oil in a large skillet over medium heat. Saute the onions, green onion, and garlic until tender. Mix in the bouillon cubes and soy sauce until the cubes are dissolved.
  2. Stir in the tomato, peppers, mushrooms, broccoli, and cooked rice. Cook, stirring constantly until the broccoli is cooked through. Season with salt and pepper before serving.

This was very tasty. I used a bag of frozen mixed veggies and not as much onion as it called for. The brown rice was a very nice change.

Delicious! I used fresh mushrooms and broccoli. I added sunflower seeds just before serving. I think you could add beans to this recipe, too, for more protein.
