  • COOK beef and garlic in a Dutch oven, stirring until beef crumbles and is no longer pink. Stir in tomatoes and next 4 ingredients; simmer 30 minutes. Set mixture aside.

  • COOK pasta according to package directions; drain. Place pasta in a lightly greased 13- x 9-inch baking dish.

  • STIR together sour cream, cream cheese, and green onions. Spread over pasta. Top with meat sauce.

  • BAKE at 350 degrees for 20 to 25 minutes or until thoroughly heated. Sprinkle with Cheddar cheese, and bake 5 more minutes or until cheese melts. Let stand 5 minutes. Serve with a salad and bread, if desired.

First of all, this has GOT to make more than 8 servings...I'd say at least 10-12! My family of four each had a decent-sized helping (and my hubby went for seconds) and there is still 3/4 of the dish left.My boyfriend and daughter enjoyed it, and I and my roommate are so-so on it. IF I make again, I think I'll cut back on the amt of meat used. Also, the sour cream and cream cheese mix was a little too much...maybe cut it in half?? Either way, good and I might try to play around with it...after we finish the large amounts of leftovers! Read More

This was dilicous!! Whole family enjoyed it! However, I did add Italian seasoning to sauce, onion and some canned mushrooms. I subsituted Ricotta for the cream cheese..thought the cream cheese would be too rich.Omitted the green onion and topped with mozz cheese instead of cheddar. Read More
