  1. In a large serving bowl, mix together the onion, garlic, mustard, red wine vinegar, and olive oil until well blended. Add the blue cheese and head cheese; toss until well coated. Season with salt and pepper to taste. Chill until serving.

I left out the head cheese and just used Blue Cheese - excellent! restaurant quality!

I used Havarti cubes and mild cheddar and this was really quite good. I tossed a pasta salad in it. Decided not to go with the head cheese, "ick" factor..
