  • In a blender, combine pineapple chunks, pineapple juice and coconut extract. Puree until smooth. Then, with the blender running, drop ice cubes one at a time into the opening in the lid of the blender. Make sure each cube is crushed before adding the next. Blend to desired texture. Serve in tall glasses.

I used canned crushed pineapple and pineapple juice from the can. I should have added a little sugar to the unsweetened juice to make it a little sweeter. Would be really tasty with coconut cream! Read More

I was in a hurry to get my ingredients for a dinner party I was planning so I went to the closest store...( a dollar store ). Ofcourse whenever you are in hurry you can never find the one thing you are in need of in this case pineapple juice so I bought the jug of orange pineapple and apple juice mix. It turned out great! Everybody said it reminded them of the pina colada drink mom use to make. They all thought it looked like a high calorie drink and were happy to find out that it was made using coconut extract instead of coconut milk which is much higher in calories.
