Anasazi Bean Chili

Western Colorado chili, also known as "Anasazi dream chili," a very healthy chili based on ingredients from the western slopes of Colorado.

Ingredients

  • 2 cups Anasazi beans

  • 4 cups water

  • 2 tablespoons extra-virgin olive oil

  • 1 medium onion, chopped

  • 2 tablespoons chopped garlic

  • 2 cups chicken broth

  • 2 cups chopped green chile peppers

  • 4 ears sweet corn, shucked and kernels cut off

  • 4 medium tomatoes, chopped

  • 1 ham hock

  • 1 (6 ounce) can tomato paste

  • salt and ground black pepper to taste

Directions

  1. Wash and drain Anasazi beans. Place in a slow cooker with 4 cups water and soak 8 hours to overnight.

  2. When ready to cook, heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.

  3. Skim foam off the top of the beans. Add onion-garlic mixture, chicken broth, chile peppers, corn kernels, tomatoes, ham hock, tomato paste, salt, and pepper. Cook on Low until beans are tender, about 8 hours.

Cook's Note:

I use Olathe corn and green chile peppers.
