View All Saved Items Rate Print Share Share Tweet Pin Email Prep Time: 20 mins Cook Time: 8 hrs 10 mins Additional Time: 8 hrs Total Time: 16 hrs 30 mins Servings: 12 Yield: 12 servings Jump to Nutrition Facts Ingredients 2 cups Anasazi beans 4 cups water 2 tablespoons extra-virgin olive oil 1 medium onion, chopped 2 tablespoons chopped garlic 2 cups chicken broth 2 cups chopped green chile peppers 4 ears sweet corn, shucked and kernels cut off 4 medium tomatoes, chopped 1 ham hock 1 (6 ounce) can tomato paste salt and ground black pepper to taste Directions Wash and drain Anasazi beans. Place in a slow cooker with 4 cups water and soak 8 hours to overnight. When ready to cook, heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Skim foam off the top of the beans. Add onion-garlic mixture, chicken broth, chile peppers, corn kernels, tomatoes, ham hock, tomato paste, salt, and pepper. Cook on Low until beans are tender, about 8 hours. Cook's Note: I use Olathe corn and green chile peppers.
