Better Than Mom's Meatloaf

I made this out of curiosity because the changes were not big changes. It didn't matter, I just wanted a good meatloaf and I got it! I had to make a few small changes like no bell pepper because I didn't have any. I also used dried thyme instead of fresh and I used ground round instead of sirloin. It still came out delicious! It still was Mom's but better! The taste was incredible! I thought the type of meat may make it dry or tough but it was soft, juicy and the ketchup topping revised will not let you down. My husband's first bite brought a big yell- This is great! This is a keeper!

The flavor of this meatloaf is wonderful! Everything melds together perfectly without one flavor overpowering another. The balsamic and ketchup glaze really adds to it so don’t skip it! I’m really pleasantly surprised at how much I enjoyed this dish because I’m not much of a beef eater but I just had to write a raving review. Thank you, I’m making this again.
