Creamy Cheddar and Spinach Casserole

  • butter-flavored cooking spray

  • 3 tablespoons butter

  • 1 medium onion, chopped

  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained

  • 1 (10.5 ounce) can condensed cream of mushroom soup

  • 1 cup grated sharp Cheddar cheese

  • 1 cup mayonnaise

  • 2 large eggs

  • 1 ½ teaspoons Worcestershire sauce

  • 1 ½ teaspoons lemon juice

  • ½ teaspoon seasoned salt

  • ½ teaspoon garlic powder

  • ¼ teaspoon ground black pepper

  • ½ cup seasoned bread crumbs

  • 2 tablespoons butter, cut into small pieces


  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 2-quart casserole dish with cooking spray.

  2. Melt 3 tablespoons butter in a skillet over medium-low heat. Add onions and saute until translucent, 5 to 7 minutes. Transfer to a bowl.

  3. Add spinach, condensed soup, Cheddar cheese, mayonnaise, eggs, Worcestershire sauce, lemon juice, seasoned salt, garlic powder, and pepper to the onions; stir to combine. Pour mixture into the prepared casserole. Sprinkle bread crumbs evenly over top and dot with remaining butter.

  4. Bake in the preheated oven for 45 minutes.

Cook's Notes:

You can use broccoli instead of spinach.

I make this the day before and refrigerated overnight, adding bread crumbs and butter just before baking.

I don't normally use garlic salt or seasoned salt because I think the other ingredients have enough salt in them for us.
