Rum-Infused Watermelon Fireworks Cocktail

Ingredients

  • 2 fluid ounces dark rum, divided

  • 2 (1 inch) cubes watermelon

  • 1 cup ice, or as needed

  • 6 fluid ounces peach-flavored sparkling water

Directions

  1. Put 1 ounce rum in a jar or bowl. Add watermelon cubes, cover, and let sit until watermelon has absorbed the rum, at least 2 hours.

  2. Fill a glass with ice and add remaining 1 ounce rum. Add sparkling water, rum-infused watermelon, and any leftover soaking juices.

Cook's Note:

I use Kraken(R) black-spiced rum and La Croix(R) sparkling water.
