View All Saved Items Rate Print Share Share Tweet Pin Email Add Photo Prep Time: 15 mins Cook Time: 20 mins Total Time: 35 mins Servings: 20 Yield: 1 16-inch cookie Jump to Nutrition Facts Ingredients cooking spray 2 teaspoons hot water 1 teaspoon baking soda 1 cup margarine 1 cup brown sugar ½ cup white sugar 1 (3.5 ounce) package instant vanilla pudding mix 1 teaspoon vanilla extract 2 large eggs 3 cups all-purpose flour 1 (12 ounce) package miniature semisweet chocolate chips Directions Preheat the oven to 350 degrees F (175 degrees C). Spray a 16-inch round pizza pan with cooking spray. Mix hot water and baking soda together in a small bowl; set aside. Cream margarine, brown sugar, and white sugar together. Add pudding mix, eggs, and baking soda mixture; mix until well combined. Slowly mix in flour until smooth. Blend in chocolate chips. Spread in the prepared pizza pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 20 minutes. Cook's Notes: I use an electric Mixmaster(R) for easy mixing. Also, when bringing one to share, I buy premade tinfoil pizza pans. I use my regular pizza pan underneath the tinfoil pan when baking. This helps with form and prevents burning. I have reduced the brown sugar to 3/4 cup and used egg beaters in place of eggs to make a bit healthier version if that is possible!
