Big Birthday Cookie Cake

This is always a hit. I have made this for school functions, birthdays, and many other occasions. Easy to make and decorate for any occasion.

Ingredients

  • cooking spray

  • 2 teaspoons hot water

  • 1 teaspoon baking soda

  • 1 cup margarine

  • 1 cup brown sugar

  • ½ cup white sugar

  • 1 (3.5 ounce) package instant vanilla pudding mix

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 3 cups all-purpose flour

  • 1 (12 ounce) package miniature semisweet chocolate chips

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 16-inch round pizza pan with cooking spray.

  2. Mix hot water and baking soda together in a small bowl; set aside.

  3. Cream margarine, brown sugar, and white sugar together. Add pudding mix, eggs, and baking soda mixture; mix until well combined. Slowly mix in flour until smooth. Blend in chocolate chips. Spread in the prepared pizza pan.

  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 20 minutes.

Cook's Notes:

I use an electric Mixmaster(R) for easy mixing. Also, when bringing one to share, I buy premade tinfoil pizza pans. I use my regular pizza pan underneath the tinfoil pan when baking. This helps with form and prevents burning.

I have reduced the brown sugar to 3/4 cup and used egg beaters in place of eggs to make a bit healthier version if that is possible!
