View All Saved Items Rate Print Share Share Tweet Pin Email Prep Time: 10 mins Total Time: 10 mins Servings: 8 Yield: 8 servings Jump to Nutrition Facts Ingredients 1 cup cashew butter 4 cloves garlic, minced 4 tablespoons brown sugar 2 tablespoons fish sauce 4 teaspoons soy sauce 2 teaspoons toasted sesame oil 1 medium lime, juiced 1 tablespoon chili-garlic sauce 1 (14 ounce) can coconut milk Directions Put cashew butter in a bowl. Whisk garlic, brown sugar, fish sauce, soy sauce, and sesame oil together. Add lime juice and chili-garlic sauce. Bring coconut milk to a simmer in a pot over medium heat. Pour warm coconut milk into the cashew butter mixture and whisk until smooth. Taste and adjust as needed. Transfer to a serving dish. Cook's Note: If you can't find cashew butter you can make your own by throwing 2 cups of salted (or salt and pepper cashews) into a food processor and process for 3 minutes; then drizzle a couple of tablespoons of coconut or olive oil in and continue to process until the right consistency is reached.
