Delicious twist to the traditional chicken sandwich! I also added fresh jalapeno, used red onion, and some red pepper.
This recipe was a tiny bit time consuming, but well worth the effort.
It was good on the first day, but even better on the second day. I used a Costco rotisserie chicken and I think that pumped up the flavor even more.
My family enjoyed it a lot. Next time I would add a little more mayonnaise and more pecans. The strawberries and chopped nuts really added a lot to it.
Tammy Lynn thank you for sharing your recipe. Great flavor, nice colors, and crunch. We all loved it. Also, it’s a recipe that allows one to customize. My husband puts it in lettuce leaves. My daughters like it simply as a salad. I add pepperoncini to it on a sandwich. I put alfalfa sprouts with it on one sandwich and that was also amazing. This is one recipe I will never get tired of making, serving or eating!
Other things we do: if you want a bit of a bite it’s tasty with a bit of horseradish added to the Mayo. I want to try it with dried cranberries or craisins. It was good with hemp hearts also. Slivered almonds are good too. Although I think the pecans as called for in the recipe are still my preference. I love this stuff!! Thanks again
Just made the strawberry chicken salad for my wife. She is looking forward to dinner, so easy and time saving by grabbing a rotisserie chicken from Costco!
This recipe is absolutely delicious. I did add some maple bacon and boiled eggs because I thought it sounded good. I wouldn't change a thing about this recipe even if I didn't add the extra ingredients. This made about 8 sandwiches for me.
My husband just made this for my lunch and it is BOMB!!! Love it!! I think the calorie and serving size is wrong though. It can’t be over 800 calories and only 2 servings. It makes a lot.
