View All Saved Items Rate Print Share Share Tweet Pin Email Prep Time: 20 mins Cook Time: 20 mins Total Time: 40 mins Servings: 6 Yield: 6 servings Jump to Nutrition Facts Ingredients 1 pound green beans, trimmed 4 tablespoons olive oil, divided 3 (5 ounce) skinless, boneless chicken breast halves, chopped 1 medium onion, sliced 3 cloves garlic, sliced 1 cup sliced mushrooms 1 medium red bell pepper, sliced ½ cup honey 3 tablespoons soy sauce 1 tablespoon cornstarch Directions Place green beans in a medium pot, cover with water, and bring to a boil. Cook for 2 to 3 minutes; drain and set aside. Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add chicken; cook until no longer pink and just starting to brown, 3 to 4 minutes. Remove from the skillet and set aside. Add remaining olive oil to the skillet and reheat. Add onion and garlic; saute for 2 minutes. Add mushrooms and bell pepper; cook for 3 minutes. Return chicken to the skillet and pour in honey; toss to coat. Mix soy sauce and cornstarch in a small bowl. Add to the skillet and bring to a boil. Reduce heat and simmer until sauce has thickened, 2 to 3 minutes. Carefully add green beans; mix well.
