Ingredients

  • 2 tablespoons olive oil

  • 1 pound skinless, boneless chicken breast, cut into 1-inch cubes

  • 2 large carrots, minced

  • ¾ cup chopped celery

  • 2 cloves garlic, minced

  • 1 cup orange juice, or more as needed

  • ¼ cup honey

  • ¼ cup soy sauce

  • 2 tablespoons cornstarch

  • ¼ teaspoon ground ginger

  • cup salted cashews

  • 2 cups hot cooked rice

Directions

  1. Heat oil in a large skillet over medium-high heat. Add chicken, carrots, celery, and garlic; stir-fry until chicken is no longer pink in the center and juices run clear, 7 to 10 minutes.

  2. Meanwhile, combine 1 cup orange juice, honey, soy sauce, cornstarch, and ginger in a small bowl; mix until blended. Pour into the chicken mixture and bring to a boil.

  3. Cook until sauce has thickened, 5 to 10 minutes longer. Stir in cashew and more orange juice if too thick. Serve over hot rice.
