View All Saved Items Rate Print Share Share Tweet Pin Email Prep Time: 15 mins Cook Time: 20 mins Total Time: 35 mins Servings: 4 Yield: 4 servings Jump to Nutrition Facts Ingredients 2 tablespoons olive oil 1 pound skinless, boneless chicken breast, cut into 1-inch cubes 2 large carrots, minced ¾ cup chopped celery 2 cloves garlic, minced 1 cup orange juice, or more as needed ¼ cup honey ¼ cup soy sauce 2 tablespoons cornstarch ¼ teaspoon ground ginger ⅔ cup salted cashews 2 cups hot cooked rice Directions Heat oil in a large skillet over medium-high heat. Add chicken, carrots, celery, and garlic; stir-fry until chicken is no longer pink in the center and juices run clear, 7 to 10 minutes. Meanwhile, combine 1 cup orange juice, honey, soy sauce, cornstarch, and ginger in a small bowl; mix until blended. Pour into the chicken mixture and bring to a boil. Cook until sauce has thickened, 5 to 10 minutes longer. Stir in cashew and more orange juice if too thick. Serve over hot rice.
