Ingredients

  • cooking spray

  • ½ pound Italian turkey sausages, casings removed

  • 1 medium onion, chopped

  • 3 (14.5 ounce) cans chicken broth

  • 2 (15 ounce) cans white beans, drained and rinsed

  • 1 pound turnip greens

  • 1 (14.5 ounce) can diced tomatoes

  • 1 teaspoon garlic powder

  • ½ teaspoon dried basil

  • ½ teaspoon dried oregano

  • ¼ teaspoon red pepper flakes

  • 1 bay leaf

Directions

  1. Spray a stockpot with cooking spray and heat over medium-high heat. Cook and stir sausage and onion in the hot skillet until sausage is browned and crumbly and onion is transparent, 5 to 7 minutes.

  2. Add chicken broth, beans, turnip greens, diced tomatoes, garlic powder, basil, oregano, red pepper flakes, and bay leaf; bring to a boil.

  3. Simmer until greens are tender, about 45 minutes.
