View All Saved Items Rate Print Share Share Tweet Pin Email Add Photo Prep Time: 10 mins Cook Time: 10 mins Total Time: 20 mins Servings: 1 Yield: 1 sandwich Jump to Nutrition Facts Ingredients 1 (10 inch) multigrain flour tortillas 1 tablespoon hummus 1 (4 ounce) grilled chicken breast, sliced 2 medium roasted red peppers, drained 2 tablespoons crumbled reduced-fat feta cheese 1 cup baby spinach leaves, or to taste cooking spray Directions Heat a panini maker. Lay tortilla on a work surface and spread with hummus. Top with sliced chicken, red peppers, feta cheese, and then spinach. Fold tortilla in half and spray with cooking spray. Grill in the preheated panini maker until outside is golden brown, 6 to 8 minutes. Cook's Notes: You can use leftover grilled chicken, rotisserie chicken, or deli lunch meat to create a healthy alternative to your basic sandwich. Kalamata olives are a great addition but be careful if you are watching your sodium intake. If you don't have a panini press, grill in a skillet on your stovetop.
