Ingredients

  • ½ (16 ounce) package orecchiette pasta

  • 1 cup cream

  • 2 slices red onion, chopped

  • 6 ounces smoked salmon, cut into strips

  • ½ cup grated Parmesan cheese

  • 1 tablespoon capers

  • 1 tablespoon salted butter

  • 1 tablespoon chopped fresh parsley

Directions

  1. Bring a large pot of salted water to a boil. Add orecchiette and cook, stirring occasionally, until tender yet firm to the bite, 9 to 12 minutes.

  2. Meanwhile, combine cream and onion in a heavy saucepan over medium-high heat. Simmer for 2 minutes and remove from heat.

  3. Gently stir salmon, Parmesan cheese, capers, butter, and parsley into the cream mixture and serve over pasta.

Cook's Note:

Half-and-half works fine in place of cream.
