  • cooking spray

  • 1 large head cauliflower, cut into small florets

  • 1 cup heavy cream

  • 2 ounces cream cheese, cut into small pieces

  • 1 ½ teaspoons Dijon mustard

  • 1 ½ cups shredded sharp Cheddar cheese, divided

  • ½ teaspoon kosher salt

  • ¼ teaspoon freshly ground black pepper

  • teaspoon garlic powder

  • teaspoon ground coriander

  1. Preheat the oven to 375 degrees F (190 degrees C). Spray a baking dish lightly with cooking spray.

  2. Bring a large pot of lightly salted water to a boil. Add cauliflower and cook until crisp-tender, about 5 minutes. Drain well and pat dry with paper towels. Transfer to the prepared baking dish.

  3. Bring cream to a simmer in a small saucepan over medium heat. Whisk in cream cheese and mustard until smooth. Add 1 cup Cheddar cheese, salt, pepper, garlic powder, and coriander. Whisk just until the cheese melts, 1 to 2 minutes. Remove from the heat and pour over cauliflower, stirring gently to combine. Sprinkle with remaining 1/2 cup Cheddar.

  4. Bake in the preheated oven until light brown and bubbly, about 15 minutes.

Cook's Note:

You can use half-and-half or fat-free half-and-half in place of heavy cream, and any cheese in place of Cheddar.
