  • 2 tablespoons salted butter

  • 1 small head red cabbage, cored and thinly sliced

  • 1 medium Granny Smith apple - peeled, cored, and sliced

  • ½ small sweet onion, cut into thin wedges

  • 1 teaspoon fennel seeds, crushed

  • kosher salt and freshly ground black pepper to taste

  • ¼ cup red wine

  • ½ teaspoon apple cider vinegar

  1. Melt butter in a large saute pan over medium heat. Add cabbage, apple, onion, fennel seeds, salt, and pepper. Saute until the cabbage softens and wilts, about 20 minutes.

  2. Pour red wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in vinegar.

Cook's Note:

Use a very small splash of cider vinegar. Too much will overpower the dish.
