Italian Sausage Chili with Rice

Chili with brown rice. Excellent chili but a bit spicy.

Ingredients

  • ¼ cup vegetable oil

  • 2 cups chopped bell peppers

  • 1 large red onion, chopped

  • 4 stalks celery, chopped

  • 4 small carrots, chopped

  • 2 ½ pounds Italian sausage links, casings removed

  • 5 (14.5 ounce) cans Italian-style stewed tomatoes, undrained

  • 6 cups water, or more to taste

  • 2 cups black beans, rinsed and drained

  • 2 cups kidney beans, rinsed and drained

  • 1 ¼ cups tomato paste

  • 1 cup uncooked brown rice

  • ½ cup chopped green chile peppers

  • 1 tablespoon chili powder, or more to taste

  • 1 tablespoon chipotle peppers in adobo sauce

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 1 cup shredded Cheddar cheese

Directions

  1. Heat oil in a large saucepan over medium heat; stir in bell peppers, onion, celery, and carrots. Cook and stir until crisp tender, about 5 minutes.

  2. At the same time, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

  3. Transfer cooked vegetables and sausage to a Dutch oven. Stir in stewed tomatoes, 6 cups water, black beans, kidney beans, tomato paste, brown rice, chile peppers, chili powder, chipotle peppers in adobo sauce, salt, and pepper. Bring to a boil.

  4. Reduce heat and simmer, uncovered, until thickened, 1 hour or more. Add more water if too thick.

  5. Ladle into bowls and sprinkle with Cheddar cheese.

Cook's Notes:

You can use any ratio of black and kidney beans equaling 4 cups total. White rice can be used in place of brown.

The chipotle in adobo is optional but adds extra taste to the chili.
