Very easy to make mashed potatoes for two. This recipe is great for a beginner. Serve with butter.

Ingredients

  • 2 (14 ounce) cans chicken broth

  • 2 medium potatoes, peeled and cut into 1-inch cubes

  • ½ (1 ounce) package ranch dressing mix

Directions

  1. Bring chicken broth to a boil in a large pot. Add potatoes, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain.

  2. Beat potatoes with an electric mixer until smooth. Mix in dressing mix.
