  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square cake pan with cooking spray.

  • Combine flour, sugar, butter, and egg in a large bowl; beat with an electric mixer until mixture resembles coarse crumbs. Measure 2 cups crumb mixture and set aside. Press remaining crumb mixture firmly into the bottom of the prepared pan.

  • Spread jam over the crumb mixture to within 1/2 inch from the edges. Sprinkle reserved crumb mixture over top.

  • Bake in the preheated oven until light golden brown, 40 to 50 minutes. Remove from the oven and cool completely before cutting into 25 squares.

Cook's Note:

You can use blackberry jam in place of raspberry, if preferred.

delicious!!! I used half jam (any kind will do) and half Nutella - SO GOOD. We all loved them as-is, but next time I'll try a 9x13 pan and see how they are if a bit thinner. of course - I'll have to make 2 pans for comparison!!! Read More

This recipe is very good. I honestly have to check a bit my oven as for this particular recipe the result was a bit crispier than I anticipated. As is, is very good and will make it again with other types of preserves. It occurred to me that I could make an orange glaze to pipe on top for a bit more decorative touch. Maybe next time. Yum!
