Spelt Banana Bread

This is the recipe my mom always used with a twist on the flour used. My baby cannot eat wheat, so I substituted whole grain spelt flour for the white flour and it tasted even better than I remembered. The baby loved it, too.

Ingredients

  • 1 ¼ cups white sugar

  • ½ cup unsalted butter, softened

  • ½ cup buttermilk

  • 3 large bananas, mashed

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 ½ cups spelt flour

  • 1 cup chopped walnuts

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1 teaspoon salt

  • ¼ teaspoon ground nutmeg

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8 1/2 x 4 1/2-inch loaf pans.

  2. Cream sugar, butter, buttermilk, bananas, eggs, and vanilla extract together in a bowl.

  3. Mix flour, walnuts, baking soda, cinnamon, salt, and nutmeg together in a separate bowl. Pour dry ingredients into wet ingredients; mix to combine. Divide batter into the prepared loaf pans.

  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

Cook's Notes:

You can use ground cloves in place of nutmeg.

If you don't have buttermilk, mix 1/2 cup milk with 1/2 teaspoon vinegar.

High altitude may need 10 to 15 minutes less baking time.
