View All Saved Items Rate Print Share Share Tweet Pin Email Add Photo 2 Prep Time: 30 mins Cook Time: 25 mins Additional Time: 1 hrs 40 mins Total Time: 2 hrs 35 mins Servings: 12 Yield: 12 rolls Jump to Nutrition Facts Ingredients ¼ cup warm water 1 (.25 ounce) package active dry yeast 1 cup milk 5 tablespoons unsalted butter ½ cup white sugar 1 ½ teaspoons salt ¼ teaspoon ground cinnamon 2 cups mashed cooked sweet potatoes 1 teaspoon lemon juice 1 large egg, slightly beaten 2 cups all-purpose flour, or more as needed 2 tablespoons salted butter, melted Directions Combine warm water and yeast in a measuring cup; stir to dissolve. Set aside. Heat milk, unsalted butter, sugar, salt, and cinnamon in a small saucepan over medium heat, stirring occasionally, until butter melts and milk begins to bubble. Place mashed sweet potatoes in a large mixing bowl and pour milk mixture over top. Add lemon juice and mix until smooth. Let cool to lukewarm, 10 to 15 minutes. Add egg and yeast mixture; blend well. Stir in 2 cups of flour and beat with an electric hand mixer at medium speed, about 3 minutes. Add enough additional flour to make a stiff dough. Turn onto a floured surface and knead until smooth and elastic. Place dough in a buttered bowl. Turn dough to butter top, then cover and let rise until double in size, 45 minutes to 1 hour. Punch down and knead once more, then shape into rolls. Place on a greased baking sheet, cover, and let rise until double in size, 45 minutes to 1 hour. Preheat the oven to 400 degrees F (200 degrees C). Bake in the preheated oven until golden, about 20 minutes. Brush tops with melted butter while hot. Cook's Note: Bake for less time if you have made your rolls small.
