  • Shred chicken meat; set aside.

  • Place cream cheese in a microwave-safe bowl. Microwave on high power until soft, about 20 seconds. Add half-and-half and stir until completely mixed; set aside.

  • Heat oil in a large skillet over medium heat. Add bell peppers, jalapenos, and garlic; saute until soft, 5 to 7 minutes. Toss in chicken, dried shallots, cayenne pepper, salt, and black pepper. Add chicken, cream cheese mixture, chicken stock, salsa, cumin, and oregano; bring to a boil.

  • Reduce heat and simmer for 1 to 2 hours.

My family really liked this recipe and I made almost all of it in the instant pot. I added 6 cups of water to the chicken breasts in the instant pot with a couple of bouillon cubes and cooked the chicken. Then I shredded the chicken inside of the instant pot with the liquid. I then added a jar of salsa verde, the sauteed and dry ingredients, and cream cheese mixture and set it on soup, but left the lid off. Read More

Excellent recipe. I cooked 2 large chicken breasts in the Instant Pot with some chicken broth and paprika and then shredded. I also poured the leftover broth into the soup. Modifications-I added one can of drained black beans and about a half a package of frozen corn. I didn’t have a shallot so I used a whole white onion. I added a bit more half n half because I’d poured the extra broth in. I used light cream cheese. Served it over rice to make it more of a complete meal. Read More

Fantastic! I'M ADDICTED. I used just 1 jalapeno and it had plenty of heat for me. I also used a can of white beans and an immersion blender to make it creamier. Just perfect! I'm making it again and will separate into 2 batches, omitting the jalapeno so it's more kid friendly. Read More

First, thank you for sharing this recipe! The base recipe is fabulous and full of flavor. I did make slight adjustments only due to my preferences, but yum-my!! I reduced the amount of Chicken broth to 6 cups just because I preferred a little more substance than soup. I didn't have any shallots, so I finely chopped a medium sized sweet onion and stir fried that with the bell peppers & minced garlic. Other than adding some black beans, everything else was as shown. I may add a green veggie next time (chopped spinach or broccoli maybe), but this is definitely a keeper. Lots of things you can do with this! Thanks again! Read More

Delicious and simple to make! I omitted the jalapeno peppers, shallots, and cayenne pepper. It was still quite zesty! I replaced one of the green bell peppers with an orange pepper. I did not top with sour cream, but added crumbled saltine crackers to cut through some of the heat. Read More
