  • Place cream cheese in a microwave-safe bowl. Microwave on high power until soft, about 20 seconds. Add half-and-half and stir until completely mixed; set aside.

  • Heat oil in a large skillet. Add bell peppers, jalapenos, and garlic; saute until soft, 5 to 7 minutes. Toss in chicken, dried shallots, cayenne pepper, salt, and black pepper. Add chicken, cream cheese mixture, chicken stock, salsa, cumin, and oregano; bring to a boil.

  • Reduce heat and simmer for 1 to 2 hours.

First, thank you for sharing this recipe! The base recipe is fabulous and full of flavor. I did make slight adjustments only due to my preferences, but yum-my!! I reduced the amount of Chicken broth to 6 cups just because I preferred a little more substance than soup. I didn't have any shallots, so I finely chopped a medium sized sweet onion and stir fried that with the bell peppers & minced garlic. Other than adding some black beans, everything else was as shown. I may add a green veggie next time (chopped spinach or broccoli maybe), but this is definitely a keeper. Lots of things you can do with this! Thanks again! Read More

Delicious and simple to make! I omitted the jalapeno peppers, shallots, and cayenne pepper. It was still quite zesty! I replaced one of the green bell peppers with an orange pepper. I did not top with sour cream, but added crumbled saltine crackers to cut through some of the heat. Read More

We all thought it was great! Everyone had seconds and thirds!! The flavor was amazing!
