Classic No-Bake Cookies with Coconut


The flavor combination of chocolate, peanut butter, and coconut is heavenly. Try not to eat it all before it sets up!

  • 2 cups white sugar

  • ½ cup evaporated milk

  • ½ cup unsalted butter

  • 3 tablespoons unsweetened cocoa powder, or more to taste

  • ½ cup peanut butter

  • 2 teaspoons vanilla extract

  • 2 ½ cups quick oats

  • ½ cup shredded sweetened coconut


  1. Bring sugar, milk, butter, and cocoa to a boil in a large saucepan. Let boil until all sugar crystals on the sides of the pan are dissolved, about 2 minutes.

  2. Remove from heat and stir in peanut butter and vanilla extract. Stir in oats and coconut until evenly distributed. Quickly spoon tablespoonfuls of dough onto sheets of waxed paper and allow cookies to set up, about 20 minutes.

Cook's Notes:

Sometimes, if I don't have shredded coconut, I use 3 cups of oats and just a touch of coconut extract in addition to the vanilla to achieve a similar flavor.

You can use regular milk in place of evaporated milk.
