  • Preheat the oven to 350 degrees F (175 degrees C). Grease 30 mini muffin cups.

  • Mix baking mix, applesauce, 1/4 cup sugar, milk, egg, oil, and 1 teaspoon cinnamon together in a bowl until just blended.

  • Spoon batter into the prepared muffin cups, filling each 3/4 full.

  • Bake in the preheated oven until golden, 12 to 15 minutes.

  • While puffs are baking, place melted butter in a shallow bowl, and combine remaining sugar and cinnamon in a second shallow bowl.

  • Dip warm puffs in melted butter, then in the cinnamon-sugar mixture.

9.29.20 It doesn’t get much easier than this. There was just a little something that didn’t quite measure up for me, and I think that may have been the flavor of the baking mix. To compensate for that, I think I’ll add a little vanilla or almond extract the next time which might give it a little extra pop of flavor and mask the baking mix. But I’m not complaining, these really are quite tasty and tender. Used a small cookie scoop which worked perfectly for filling the mini muffin cups. made this a little more carb friendly, used carbquick instead of bisquick. Almond milk instead of whole milk , and swerve for the sugar. Also made my own applesauce from fresh picked apples from last weeks apple picking trip. These were sooooo delicious. Will definitely be making a second batch. Read More

I made these tonight but agree that the batter could use a little something extra for flavor such as a tsp. or two of vanilla or other. I didn't want to turn on the oven so I made regular size muffins which made 9, and baked them in my convection toaster oven for 13 minutes. I will make them again but use my mini muffin pan and the big oven. Very easy to make when you don't want to go through all the trouble of regular batter. Read More
