I just made this for dinner and it definitely is the best baked Ziti I've ever had. I used Rao's Marinara Sauce since I think that's what Chef John used in the video based on part of the label I could see (I paused and zoomed in). I followed the recipe exactly and didn't even need to add more salt and pepper. It was perfect and will be making this again.
Chef John, you are the best! This is a top ten meal in our family. My children are young at 9, 7 and 4. They are super picky and it's rare to find a meal that they all like. Well this is one! I cook this in a large lasagna pan. And after the first meal, we always have enough left over for two more meals. I chill the pan overnight in the fridge, then divvy the leftovers into food saver bags and vacuum seal them for the freezer. I do make a couple of changes to this recipe, I add about 1/2 cup of Asiago and mix it with the pecorino and I add about 1/2 cup red wine to deglaze the sausage and onions. Everything is better with asiago and red wine ;-)
I made this recipe as a last-minute dinner, and my family loved it! Made a couple of substitutions, including the suggested parmesan for pecorino romano - I didn't have any Italian sausage, so I used a pound of lean ground beef and adjusted the spices accordingly. Also chopped up a 1/4 cup of fresh basil to replace the Italian parsley. Taste is amazing, texture is heavenly. Use whole-wheat pasta for a bit of extra nutrition. Next time we'll try the sausage, because I plan to make it again!
