Quick Pumpkin Pudding

  • 1 ½ cups cold nonfat milk

  • 1 (3.4 ounce) package instant vanilla pudding mix

  • 1 cup pumpkin puree

  • ½ teaspoon ground cinnamon


  1. Combine cold milk and pudding mix in a large bowl; beat with an electric mixer until well blended, about 2 minutes. Stir in pumpkin puree and cinnamon. Spoon into 4 individual serving bowls.

  2. Refrigerate until set, about 10 minutes

Cook's Note:

You can use mashed, fresh pumpkin in place of canned, if desired.
