Easy Zucchini Stir-Fry

This zucchini stir-fry includes sweet onion, diced tomatoes, and garlic for a quick and easy vegetable side dish. Goes great with grilled chicken breast, fish, or pasta. Ever since I have been making it, my husband can eat almost all of it in one sitting!

Ingredients

  • 1 tablespoon olive oil

  • 1 tablespoon minced garlic

  • 1 large sweet onion, thinly sliced

  • 2 medium zucchini, halved and sliced

  • 1 (14.5 ounce) can diced tomatoes

  • 1 pinch Italian seasoning, or to taste

  • salt and ground black pepper to taste

Directions

  1. Heat oil and garlic in a large skillet or wok over medium heat. Cook and stir onion in hot oil-garlic mixture until onion is almost translucent, about 5 minutes. Add zucchini; cook and stir until zucchini is slightly crisp, but not mushy, about 10 minutes.

  2. Mix in diced tomatoes and cook for 5 minutes more. Stir in Italian seasoning, salt, and pepper.
