  • Heat oil in a medium saute pan or skillet over medium heat. Add broccoli, cherry tomatoes, and pesto; cook and stir for 5 to 10 minutes. Add zucchini noodles and continue to cook and stir until vegetables are tender, about 5 minutes more.

  • Sprinkle with Parmesan cheese, salt, and pepper. Remove from heat and let sit for 3 to 5 minutes before serving.

You can use any of your favorite pasta instead of zucchini noodles.

This was a super easy and great dish! I am dairy-free so I used a DF pesto and I did not add cheese at the end. The cheese would have been a nice salty addition though. This meal was ready in about ten minutes which was great. Read More

My husband couldn't stop talking about this dish! And normally he wouldn't eat zucchini or a dish without meat. Very easy to throw together and very tasty. We will definitely make this again but maybe top with a piece of grilled chicken or sausage to keep hubby happy! Read More
