  • Stir sour cream and mayonnaise until well combined. Set aside.

  • Combine corn, diced tomatoes, green onions, cilantro, salt, pepper, and cumin in a large bowl. Stir in sour cream mixture. Fold in Cheddar cheese.

Really good, quick recipe that is made with things already in the pantry. I’ve made it using Mexicorn and fire roasted canned corn, and it is all good!! Delicious! I stir fried frozen corn in a hot pan with butter to give the corn a grilled flavor. I didn’t have Cotija cheese so I used a Mexican cheese blend.
