Banana Split Sandwich

This banana split sandwich is an alteration on a recipe sent home from my son's daycare.

  • ½ banana

  • 1 tablespoon creamy peanut butter

  • 2 slices white bread

  • 1 tablespoon strawberry preserves

  • 2 tablespoons mini marshmallows

  • 1 ½ teaspoons mini chocolate chips

  • butter-flavored cooking spray


  1. Cut banana half lengthwise into 3 slices.

  2. Spread peanut butter on one slice of bread. Spread strawberry preserves on the other slice.

  3. Arrange mini marshmallows over the peanut butter. Sprinkle chocolate chips over peanut butter, then lay banana slices over top. Top with remaining slice of bread, preserve-side down, to form a sandwich.

  4. Spray a skillet with cooking spray and cook sandwich over medium heat until browned on both sides and marshmallows are beginning to melt, 3 to 4 minutes per side.


You can use whole wheat bread instead of white, and crunchy peanut butter instead of creamy.

The original recipe uses pineapple preserves instead and adds a sliced strawberry, but leaves out the marshmallow.
