View All Saved Items Rate Print Share Share Tweet Pin Email Prep Time: 10 mins Cook Time: 15 mins Total Time: 25 mins Servings: 4 Yield: 4 servings Jump to Nutrition Facts Ingredients 25 uncooked medium shrimp, peeled and deveined 1 teaspoon blackened seasoning, or to taste ½ fresh pineapple, diced 1 (15 ounce) can whole kernel corn, drained 1 bunch fresh spinach, or to taste Directions Cook the shrimp on medium-high heat until fully pink, seasoning with blackened seasoning while you stir, about 5 minutes. Add pineapple and allow to cook for 5 to 7 minutes. Mix in corn and cook for 5 to 7 minutes. Serve warm on a bed of spinach. Cook's Note: You can substitute your favorite seasoning if you don't like blackened.
